Trader Joe's Turkey Taco Tuesday

One of the staple recipes that my household loves is Turkey Tacos.  I am a big fan of the TJ ground turkey, as well as the hard taco shells.  See the bottom of this blog entry for my Turkey Taco recipe.  They're tastier than beef tacos, in my opinion!

Turkey Tacos:

Brown one package turkey breast (the breast part is essential) in a non-stick pan.  I use a tiny bit of EVOO, but you can use cooking spray too.
Once turkey is nearly browned, add 1 Tbsp of chili powder and 1 tsp. cumin.  Mix well.
Then add 1 jar prepared salsa.  I use mild for my kids.
You can also add some chopped mushrooms, red peppers, corn, etc. while the meat simmers.
Let it simmer for 10 minutes or more.  Mix every 10 minutes if you simmer for longer.
Fill shells, top with chopped lettuce, grated cheese, sliced black olives and avocado chunks.

YUM!

No More Sandwiches! Great Lunch for Home and Work

I have officially OD-ed on sandwiches for lunch.  Unless it's a melted turkey and cheese sandwich on toasted TJ pretzel bread.  But that's another blog entry.

I love, love, love dips, salads, hummus, salsa, etc.  Here is one of my faves from TJ, whether its a work day or an at-home lunch.


Ingredients:
 
Feta Cheese Spread - this has a spicy kick (red pepper) which I am not a fan of, but I love the feta with Mediterranean spices.

Golden Round Crackers - I have mentioned these before.  I love them and kind of have to not buy them because my kids eat them faster than I do.

Hummus - I like all the different hummus flavors that I have tried from TJ.  My two faves are Kalamata and Edamame.

Pita - can't go wrong with TJ Pita bread!

Nutty Grain Salad- this wasn't what I expected, but with a little salt I really like it.

Cranberry Almond Grain Medley - I was not a fan of this, and will not be buying it again!


 




TJ Fish Tacos - A Complete and Yummy Dinner!

I love when Trader Joe's gives me a complete dinner!  This is a goodie.  And, most importantly, BOTH my kids ate this up.


Ingredients:

Trader Joe's Flour Tortillas - these are delicious!  My husband says they taste quite close to the homemade ones that is Peruvian Aunt made when he was little.

Broccoli Slaw - this is a little bland on its own, but if you mix it with some ranch dressing (I don't like the cilantro ranch that the TJ folks suggested) it tastes SO good with this recipe.

Battered Halibut - this is in the frozen food section.  I'm not a big halibut fan, but it works in tacos really well!  I bake it, cut it up, squeeze some lemon over it.

Cheddar Cheese - the necessary and important condiment for all taco recipes!


TJ Frozen Risotto Two Ways!

I love when they have samples out at TJ.  My 3-year old, as soon as he walks in, tells me that he is thirsty and needs juice.  This is because almost every time we are at TJ, they have two samples - one is juice.  Yesterday, they were sampling Watermelon-Cucumber juice, which my son loved!

They were also sampling Butternut Squash Risotto.  My son and I shared a little cup of it and we both liked it.  But I didn't like it enough to buy it.  It was a little bland.  So, without sampling, I bought the Mushroom Risotto and made it for lunch.  My son did not like it (no surprise, he doesn't like mushrooms) but I did like it.  Like, not love.  I'm on the fence as to whether or not I'll buy it again.  I'm certainly not going to make risotto from scratch, so this will work when I have a craving.
